Vegetarian Breakfast Casserole

1. Colorful Beet Salad with Carrot, Quinoa & Spinach

The flavor boost in this easy dish comes from two things: Hot mustard, and sun-dried tomatoes. Spicy mustard adds a piquant flavor — not easily identifiable, but a strong supporting player in the background. (Don’t worry — this doesn’t taste overwhelmingly of mustard!). See Recipe Details!

2. Zucchini and Green Chile Egg Breakfast Casserole

I have a thing for breakfast casseroles. Part of this is shameless self-interest; I just finished writing a book on modern, updated casseroles, and out of all the recipes, I loved the breakfast casseroles the most! Self-promotion aside (the book doesn’t come out until January) the process helped me remember afresh how wonderful a breakfast casserole can be. It will feed you for days, it is often easily transportable, and it can be prepped ahead of time. Here are a dozen fresher, more modern breakfast casseroles that would make wonderful weekday meals for you and yours. See Recipe Details!

3. Brie-and-Veggie Breakfast Strata

Looking to feed a crowd? This sourdough bread based strata serves 8-10 brunch guests. We promise you won’t have leftovers. Creamy Brie cheese combines with the fresh flavors of onion, bell pepper, and potatoes in this hearty casserole. Add breakfast sausage or cubed honey ham to up the protein and add more flavor. Make sure you prepare the entire casserole the night before you plan to serve it, so the bread has time to absorb into the eggs, milk, and oil, and cheese. Just pop it in the oven the next morning and bake for 45-50 minutes. Serve with sweet berries for a balanced meal. See Recipe Details!

4. Spring Vegetable Egg Casserole

Nothing against mega Christmas dinners, or 4th of July grill-outs, or Thanksgiving all-day-eat-a-thons.  They’re all well and good.  I just especially love that on Easter — after going to church in the morning, and celebrating this wild and wonderful promise of hope that was discovered on a morning long ago, that we come back home (yes) in the morning and — we brunch.

It seems pretty perfect to me. See Recipe Details!
